Ingredients

For the mac and cheese bites

  • 8 ounces elbow macaroni

  • 2 tablespoons unsalted butter

  • 2 tablespoons all-purpose flour

  • 1 cup whole milk

  • ¼ teaspoon garlic powder

  • ¼ teaspoon salt, plus more for the pasta water

  • Pinch of black pepper, optional

  • 2 cups freshly shredded sharp cheddar cheese, divided

  • 1 large egg, lightly beaten

  • ⅓ cup fine plain breadcrumbs or finely crushed buttery crackers

Instructions

1. Prepare the mold and pasta

Preheat the oven to 375°F.

Place the pumpkin-shaped silicone mold on a sturdy baking sheet. Lightly coat the inside of each cavity with nonstick cooking spray or softened butter.

Cook the elbow macaroni in salted water until just barely al dente, following the lower end of the package cooking time. Drain well and set aside. Do not overcook the pasta because it will continue cooking in the oven.

2. Make the cheese sauce

Melt the butter in a medium saucepan over medium heat. Whisk in the flour and cook for approximately one minute.

Slowly pour in the milk while whisking. Continue cooking and stirring for 2–4 minutes, or until the sauce has thickened enough to coat the back of a spoon.

Reduce the heat to low. Add the garlic powder, salt and optional black pepper. Stir in 1½ cups of shredded cheddar, a little at a time, until melted and smooth.

Remove the cheese sauce from the heat.

3. Combine the mixture

Add the cooked macaroni to a large mixing bowl and pour the cheese sauce over it. Stir until every piece is evenly coated.

Allow the mixture to cool for approximately five minutes so it is warm rather than piping hot.

Stir in the beaten egg, breadcrumbs and remaining ½ cup of shredded cheddar. Mix thoroughly. The mixture should be thick and cohesive rather than loose or runny.

4. Fill the pumpkin mold

Spoon the macaroni mixture into the prepared pumpkin cavities.

Press the mixture down firmly with the back of the spoon, filling each cavity completely. Compacting the macaroni helps the bites hold their shape after baking.

Depending on the size and number of cavities in your mold, you may need to bake the bites in two batches.

5. Bake

Bake for 18–22 minutes, or until the tops are lightly golden and the bites feel set around the edges.

6. Unmold and decorate
